Vegetarians may enjoy tortilla wraps with peppers, onions, and sweet potato topped with feta and soured cream.

Ingredients
- 2 medium sweet potatoes
- 1 onion
- 2 onions, red
- 1 big deseeded red pepper
- 1 tablespoon vegetable oil
- 2 tablespoons cider vinegar or white wine vinegar
- 30g fajita seasoning sachet
- 8 little tortilla wraps
- 12 little box chopped coriander
- 12 cup low-fat soured cream
- shredded tiny iceberg lettuce
- 100g crumbled reduced-fat feta cheese
Method

STEP 1
Preheat the oven to 200°C/180°C fan/gas 6. Toss the produce into chunky wedges with the oil, vinegar, and fajita spice in a large mixing basin. Cook for 40 minutes, flipping halfway through, in a single layer on a large baking pan.
STEP 2
Meanwhile, reheat the wraps according to the package directions. When the vegetables are done, sprinkle with coriander and roll them up in the wraps with a dollop of soured cream, lettuce, and crumbled feta on top.
