Oven Egg & Chips Recipe

This very simple supper may be made in a single pan for easy cleanup.

  • 2 medium baking potatoes, sliced into large wedges
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 2 halved tomatoes
  • 2 eggs

Preheat the oven to 190°C/170°C fan/gas 5. Place the potato wedges in a roasting pan. Drizzle with oil and sprinkle with paprika. Season and coat the potatoes well. Roast for 25 minutes, until nearly tender, rotating halfway through.


Place the tomatoes cut-side up among the potatoes. Make two holes in the tin and break one egg into each. Return the eggs to the oven for 6-8 minutes, or until they are just set.
