2 medium baking potatoes, sliced into large wedges
2 tablespoons olive oil
1 tablespoon smoked paprika
2 halved tomatoes
2 eggs
Method
STEP 1
Preheat the oven to 190°C/170°C fan/gas 5. Place the potato wedges in a roasting pan. Drizzle with oil and sprinkle with paprika. Season and coat the potatoes well. Roast for 25 minutes, until nearly tender, rotating halfway through.
STEP 2
Place the tomatoes cut-side up among the potatoes. Make two holes in the tin and break one egg into each. Return the eggs to the oven for 6-8 minutes, or until they are just set.
