Roast onions, courgettes, and red peppers, then serve with juicy pig sausages in a tomato sauce.

Ingredients
- 1 onion, divided into 16 wedges
- 3 courgettes, peeled and chopped into bite-sized pieces
- 1 red pepper, chopped into small bits
- 3 tablespoons olive oil
- 8 medium pork sausages
- 2 smashed garlic cloves
- 400g chopped tomato from a can
Method
STEP 1
Preheat the oven to 220°C/200°C fan/gas 7. Place the onion, courgettes, and red pepper in a single layer in a baking dish big enough to hold them all. Season with 2 tablespoons of olive oil. Cook for 20 minutes in the oven.
STEP 2
Meanwhile, heat the remaining olive oil in a frying pan and brown the sausages on both sides for approximately 5 minutes.
STEP 3
Season again, then stir in the garlic and chopped tomatoes, then top with the sausages and return to the oven for another 20 minutes, or until the veggies are soft.
