Ingredients
- 750g Desirée potato (about 3 medium large)
- Peeled groundnut oil
- Sea salt and freshly ground black pepper for drizzling
Method
STEP 1
Preheat the oven to its highest temperature, ideally 250°C/fan 230°C/gas 9. Each potato should be cut into 1cm-wide slices, then into 1cm-thick sticks. Blanch for 3 minutes in a large pot of boiling water, then drain well.
STEP 2
Shake the potatoes onto a roasting pan, drizzle with oil, making sure each chip is evenly coated, and season generously. Bake for 15-20 minutes, or until golden brown and crisp, turning the potatoes at least twice.
