The standard pizza stone is a hunk of clay or porcelain that has been baked at a very high temperature so that it can hold and distribute the oven’s heat evenly. While clay stones provide excellent insulation, they may easily break if not handled with care.

Cast iron and cordierite are used to create oven stones because they are more durable than clay and ceramic stones. Almost any kind of stone you choose with will be cumbersome and delicate when it comes time to clean.
